The latest addition to the ubiquitous Rustica brand is a grab-and-go cafe sitting in the heart of the swanky new Rialto development on Collins Street.
You have more than likely popped into the Fitzroy mainstay at some point to pick up a loaf of their artisan bread, or the CBD and Hawthorn cafes for a bite to eat. Rustica Rialto, however, combines the best of both worlds in a sleek package amongst the suits of the city.
We tried the blackberry cured ocean trout, quinoa and freekah salad, heirloom vegetables, kale zaatar, and sumac yoghurt; a delicious combination of sweet and savoury flavours in a light brunch package that provides something substantial to those seeking a respite from the usual smashed avo.
The thyme-roasted wild mushrooms, olive tapenade, goats whip, kale, white truffle, poached eggs and sourdough was also delivered to the table; an umami filled option for those keen on big flavours and punchy truffle overtones.
There are plenty more classics to try here as well: from classic chilli scrambled eggs paired with manchego, through to a pretty and simple fruit toast dish accompanied by edible flowers and seasonal fruit. And afterwards, if you still have a little space for sweets, you can choose from a selection of delectable cronuts, eclairs and more.
