Easter is over and with it comes a crazy amount of leftovers – mainly in the form of hot cross buns and chocolate. If you’re looking for something to do with those hot cross buns before they go stale, we have two awesome recipe ideas thanks to Bakers Delight. Someone make them for me?

Hot Cross Bun Ice Cream Sandwiches

Ingredients

  • 6 Bakers Delight Choc Chip Hot Cross Buns
  • 1 litre of vanilla ice cream
  • 3 tbsp. chocolate hazelnut spread
  • Salted caramel dessert sauce – for drizzling
  • Crushed peanuts

Method

  1. Slice Hot Cross Buns in half (lengthways)
  2. Place bottom half of the buns into a baking dish (23 x 19 x 6 cm)
  3. Spread chocolate hazelnut spread over bottom half
  4. Place one scoop of ice cream onto each hot cross bun (6 scoops for a 6-pack)
  5. Freeze for 10-15 minutes to allow ice cream scoops to harden
  6. Remove from freezer
  7. Drizzle with caramel sauce and sprinkle crushed peanuts
  8. Cover with top half of Hot Cross Buns
  9. Cut and serve to guests

Hot Cross Bun & Butter Pudding

Ingredients

  • 6 Bakers Delight Traditional Hot Cross Buns
  • 2 cups cream
  • 1 cup milk
  • ½ cup caster sugar
  • 4 eggs
  • Zest of 1 orange
  • 1 handful sultanas
  • Berries and cream to serve
  • Icing sugar to sprinkle

Method

  1. Pre-heat oven to 160°c fan bake
  2. Slice Hot Cross Buns in half (lengthways)
  3. Butter the baking dish (23 x 19 x 6 cm) and lay the bun bottoms on the dish
  4. Mix the cream, milk, caster sugar, eggs and orange zest in a bowl and pour over bun bottoms
  5. Sprinkle over sultanas and place bun tops on top
  6. Bake at 160°c for 30-40 minutes
  7. Dust with icing sugar. Serve with cream and berries
