If you were worried that you’d missed the epic BBQ goodness of the Burn City pop up smokehouse in the city, we have good news: Grand Hyatt has confirmed that the popular eatery will be staying put until 30 November this year… at least, that is.
Last week, we headed into the modern, sleek restaurant in the heart of the Grand Hyatt on Collins St to get our own serving of their signature dishes and smokey BBQ goodness – and we can confirm that those servings are more than generous, as expected from a good ol’ smokehouse.
Armed with a new spring menu, the kings of meat behind Burn City Smokers, Steve Kimonides and Raphael Guthrie, join together with Grand Hyatt’s Executive Chef Jason Camillo, to deliver delicious, deep flavour that channels their passion of smoking with wood.
We chose the Tasmanian free-range baby back pork ribs, with lashings of chipotle glaze, partnered with a herby slaw, unctuous mac’n’cheese, and a hearty potato salad. We also added the unique smoked lamb rump paired with pickled cucumber, candied olive and smoked yoghurt – another clear winner.
With so many other tempting offerings on the menu, like the duck smoked two ways and 8-hour smoked Tasmanian beef short rib paired with Chimmichurri, we’ll definitely be back to indulge in another enjoyable meat coma.
